Sweet and Sour Chicken Recipe


Here is another great Chinese recipe; you’ll think it was from the restaurant down the street.


Ingredients:

6 Boneless Skinless Chicken Breasts (1” cubes)

Flour

4 Egg Yolks

2 Tbsp. Soy Sauce

Oil

2 Onions (1” chunks)

1 Green Pepper (1” chunks)

1 Can Pineapple Chunks (save the juice)

3 firm Tomatoes (1” chunks)

1/3 Cup Sugar

1/2 Cup Vinegar

1/4 Cup Orange Juice

1/2 tsp. Salt

1/4 Cup Pineapple Juice

1/4 Cup Ketchup

2 Tbsp. Cornstarch


Directions:

In a bowl, mix the egg yolks, soy sauce, and a bit of water.  Cover the chicken in flour, then the egg mix, and then the flour again.  Deep fry the chicken in batches for 2 to 3 minutes, and let them drain on paper towels.


In a wok, stir-fry the onions and pepper for a minute, then remove from the pan, and set aside.


In a saucepan, combine the sugar, vinegar, orange juice, salt, pineapple juice, and ketchup.  Bring to a boil, then let simmer for 10 minutes.  Add the cornstarch, to the mixture, and stir until it has thickened.


Add the pineapple chunks and tomato to the sauce, and heat thoroughly.  Pour the sauce over the chicken, and add the pepper and onion mixture, and you’re ready to serve.
