Roast Chicken Recipe
This is a fantastic roast chicken, so good, there’ll be nothing left.
Ingredients:
3.5 lb. Chicken, split
Kosher Salt & Fresh Ground Black Pepper
8 oz. Baby Portabella Mushrooms
1/2 Lemon
1/2 Cup White Wine
1/2 tsp. Dried Thyme
1/2 tsp. Fresh Parsley, chopped
Preheat the oven to 475 degrees F.
Directions:
In a large frying pan, heat the pan over high heat, and add 2 Tbsp. of oil. When the pan is smoking, place the chicken, skin side down. Season the top with salt and pepper, and take the entire pan and move it to the oven, set to 475 degrees F, for 10 minutes.
Remove the pan from the oven, and flip the chicken over. Season the skin side with salt and pepper, and return the pan to the oven for 25 to 30 minutes.
Remove the chicken from the oven, and place it on a plate, and cover it with aluminum foil.
Discard all but 3 Tbsp. of the pan drippings, and place it back on the stove. Add the mushrooms and sauté for 2 minutes. Add the lemon, wine, thyme, salt, and pepper and let it cook for 2 more minutes. Finish by sprinkling on the parsley, and serve the sauce with the chicken.
