General Tso’s Chicken Recipe
This is a great spicy Chinese recipe. You’ll feel like it’s take out, you might want to get some Chinese take-out boxes to feel at home.
Ingredients:
1 lb. Chicken Thighs, boneless
1 Tbsp. Light Soy Sauce
1 Egg, lightly beaten
Fresh Ground Black Pepper, to taste
Cornstarch, as needed
3 Green Onions
5 to 10 small Dried Red Chili Peppers, to taste
3 – 4 cups Oil, as needed
Sauce
2 Tbsp. Dark Soy Sauce
2 tsp. Chinese Rice Wine or Dry Sherry
1 Tbsp. Rice Vinegar
3 Tbsp. Chicken Broth or Water
1 Tbsp. Granulated Sugar
1 Tbsp. Ginger, minced
2 tsp. Garlic, minced
2 tsp. Cornstarch
Directions:
Cut the chicken into 1” pieces, and combine with the egg, soy sauce, and pepper. Add cornstarch, enough to coat the chicken, and mix with your hands. Slice the green onions very thinly.
In a bowl, combine the dark soy sauce, wine, vinegar, broth, sugar, ginger, garlic, and cornstarch. Stir until the sugar has dissolved.
In a wok, heat the oil between 350 and 360 degrees F. Add the chicken into the hot oil, a few pieces at a time, for 3 to 4 minutes, until they are crispy. Remove the chicken, and let them drain on a paper towel.
Now you can drain and clean out the wok.
Heat 2 Tbsp. of oil, ad when it’s hot, add the green onions and chili peppers, and stir-fry for about 30 seconds. Add the chicken, until it’s browned. Push the chicken up to the sides of the wok, out of the oil, and add the sauce mixture, stirring continually for 1 to 2 minutes, until the sauce has thickened.
Mix the sauce and chicken, and serve.
