Chicken and Broccoli Recipe


This is a great simple Chinese recipe that practically everyone likes.


Ingredients:

2 1/2 Tbsp. Soy Sauce

1 Tbsp. Water

1/2 Cup Picante Sauce

1/2 tsp. Sugar

1 Tbsp. Cornstarch

3 Chicken Breasts, boneless, cut into 1” cubes

3 Tbsp. Vegetable oil

2 Garlic Cloves, minced

1 Onion, cut into thin wedges

1 Pepper, chopped

1 Tbsp. Ginger

2 Cups Broccoli Flowerets

Cooked Rice


Directions:

In a small bowl, mix the soy sauce, water, picante sauce, sugar, and cornstarch and set aside.


Heat 2 Tbsp. of oil in a wok on high heat, add the chicken and stir-fry for 3 to 4 minutes.


Add the remaining oil, garlic, onion, peppers, ginger, and broccoli and stir-fry for another 3 minutes. 


Add the sauce mixture, and stir-fry until the sauce thickens, about 1 minute.  Serve with rice.
