Chicken With Peanut Sauce Recipe


This classic Thai dish, it’s a sure crowd pleaser.


Ingredients:

2 Boneless Skinless Chicken Breasts

1/4 tsp. Fresh Ground Pepper

Salt

2 tsp. Butter

2 Cups Napa Cabbage, shredded

1/4 Cup Peanut Butter

1 Tbsp. Lime Juice

1/2 Cup Water

1/4 tsp. Ground Cumin

1/4 tsp. Ground Coriander

1 Garlic Clove, chopped

1 Green Onion, sliced

1/2 small Red Bell Pepper, chopped


Directions:

Lightly season both sides of the chicken with salt and pepper.


In a 10” skillet, melt the butter over medium heat.  Cook the chicken in the butter for 15 to 20 minutes, flipping once.  Remove the chicken, but keep it warm.


Add the peanut butter to the skillet.  Add the lime juice, water, cumin, coriander, garlic, and onion.  Heat over medium heat, stirring, until it’s hot and slightly thickened.


Split the shredded cabbage onto 2 serving plates, and lay the chicken on top, and pour the sauce on top.


Serve with the red pepper.
