Chicken Lo Mein Recipe
Chinese noodles with chicken are so tasty and fun to eat!
Ingredients:
1/4 Cup Soy Sauce
1/2 Cup Seasoned Rice Vinegar
2 Tbsp. Vegetable Oil
1/2 tsp. Ground Ginger
1/2 tsp. Garlic Powder
1 lb. Chicken Breasts, boneless & skinless (cut in thin strips)
2 Tbsp. Vegetable Oil
1 1/2 Cups Broccoli Flowerets
1 large Onion, cut into wedges
1/2 small Red Bell Pepper, cut in thin strips
8 oz. Fresh Mushrooms, sliced
1/2 small yellow bell pepper, cut in thin strips
1 Cup Water, cold
2 Tbsp. Cornstarch
1 tsp. Chicken Bouillon
1/2 lb. Spaghetti or Linguine, cooked
Directions:
Combine the soy sauce, vinegar, vegetable oil, ginger, and garlic in a medium bowl. Add the chicken, and cover to let marinate in the refrigerator for 1 to 24 hours.
Heat 2 Tbsp. of oil in a wok. Add the chicken and broccoli, and stir-fry for 2 minutes. Add the onion, mushrooms, and peppers until they’re tender.
Mix the water, bouillon, and cornstarch. Add to the chicken, and stir until thickened. Add the noodles, and mix thoroughly. Serve.
