BBQ Chicken Recipe


This is a great barbecue recipe, with homemade barbecue sauce.


Ingredients:

1/2 Cup Chicken Broth

2 Garlic Cloves, finely chopped

1 medium Onion, finely chopped

1/4 tsp. Celery Seeds

1/4 tsp. Cayenne Pepper

1 Tbsp. Dry Mustard

1 Bay Leaf, broken in half

1 Cup Beer or Ginger Ale

1 Cup Chili Sauce

1 Tbsp. Cider Vinegar

2 Tbsp. Molasses

1 Tbsp. Worcestershire Sauce

Salt and Pepper

8 Chicken Breast Halves, skinless

2 tsp. Oil


Directions:

Simmer the broth, garlic and onion in a medium saucepan.  Let simmer for 5 minutes covered, over medium low heat.  Stir in the celery seeds, cayenne, mustard, and bay leaf.  Add the beer, chili sauce, vinegar, molasses, and Worcestershire sauce.  Let simmer over medium low heat, for about 30 minutes, until it’ slightly thickened.  Take out the bay leaf, and season with salt and pepper.


Preheat a medium hot grill, and lightly oil the grill rack with cooking spray.  Rub the chicken with 2 tsp. of oil and lightly season with salt and pepper.


Grill for 3 minutes, then turn the chicken over and grill for 3 more minutes.  Brush the chicken with your barbecue sauce, turning and brushing 3 times more until the chicken is done, about 20 minutes.


Boil the rest of the sauce for 3 minutes and serve with the chicken.
